Sugar beets (Beta vulgaris) are oblong, white beets shaped like oversized rutabagas. They are high in sucrose and responsible for approximately 20 percent of the world's annual sugar production. Root innards are slightly translucent with rings; the broad leaved greens are lush with white stems. This is the beet variety that can win over those averse to the staining of red varieties; it's a great choice for deserts and baking.
