Chinese Giant Orange Amaranth (Amaranthus hypochondriacus) plants formåÊdark orange flowers on yellow-orange stalks that can reach a commanding eight feet tall under ideal cultivation conditions. This is an excellent amaranth strain to grow for food; the young greens can be cooked and eaten like spinach and the light tan seeds can be cooked as a grain for either sweet of savory purposes. Plants are tolerant of poor soils, but will yield much greater in a well-tended garden with rich soil.
