Large Flowered (or sometimes called Redsepal) Evening Primrose (Oenothera glazioviana, previously Oenothera lamarckiana) is a tall (up to 5 feet) bushy plant with gorgeous yellow flowers that open in the late afternoon. The entire plant is edible: young leaves are a tasty cooked green; the flowers can be used as a salad or soup addition and the young seedpods are eaten as a fruit or dried seeds ground. The roots can be also dug up and cooked (preferably in fall/winter of the first year of plant growth) and have a peppery parsnip flavor.
